Bacon and Blue Cheese Stuffed Pork Chops

Ingredients:

8 slices thin-cut applewood smoked bacon
1 cup blue cheese crumbles
4 boneless pork chops, cut into 11/2 inch-thick pieces

1 teaspoon kosher salt, divided
1 teaspoon ground black pepper, divided


Cooking Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Fry bacon over low heat in cold skillet until crispy, about 15 minutes. Reserve bacon grease in a small bowl.
  3. Combine blue cheese and bacon in food processor until bacon is broken down into small bits, 1 to 2 minutes.
  4. Cut a pocket into side of each pork chop for bacon and blue cheese stuffing mixture.
  5. Measure 1/4 cup blue cheese and bacon mixture and set remaining mixture aside. Stuff pork chops with the ¼ cup bacon and blue cheese mixture.
  6. Season each pork chop with ¼ teaspoon kosher salt and ¼ teaspoon ground black pepper.
  7. Heat 5 tablespoons reserved bacon grease in cast iron skillet and sear pork chops until lightly golden brown, about 3 minutes on each side.
  8. Transfer pork chops to baking sheet or baking dish and roast in preheated oven, about 20 minutes. A thermometer inserted near the center of the pork chop should read at least 145°F (63°C).
  9. Remove pork chops from oven and top with remaining blue cheese and bacon mixture and serve immediately.
